Rose Wilde is eager to share her insights on whole grain baking with you! Join her for a week outside Toulouse, where you'll engage in immersive workshops that delve into the essence of baking. Explore the nuances of whole grain usage, experiment with diverse baking ratios, and enhance your skills through hands-on techniques. The experience will culminate in a delightful Midsummer celebration in the château courtyard, where the joy of baking will be showcased with a vibrant array of cakes and treats. What will you do?

Rose Wilde has journeyed across the globe as an esteemed pastry chef and baker, and we are delighted to welcome her to the picturesque southwest of France. Our setting will be none other than the enchanting Château de Labusquière, a charming countryside home blooming with roses!

During your week with Rose just outside Toulouse, you will participate in various baking and pastry workshops that emphasize the advantages of working with whole grains. You will harness the abundant seasonal produce from vibrant summer markets to craft exquisite treats and meals. To cap off our culinary adventure, we’ll join forces on our final evening to assemble a stunning flower-studded Wilde-style dessert display. Let us have cake!

When you're not busy in workshops or unwinding at our lovely château, you’ll have the chance to explore the captivating surroundings. We’ll visit a traditional French open-air market to source fresh local ingredients, meander through the scenic streets of Toulouse, known as "La Ville Rose,” and finish the week at one of our beloved countryside restaurants with a view, just around the corner from the château.

  • Eating and drinking are communal! You’ll have the opportunity to cook food, taste wines and learn from experienced teachers. We can’t wait to welcome you for our workshops! Outside of workshops, please feel free to join us in the kitchen at anytime. You’re invited to our weeklong dinner party, and we’re happy to have you in to learn alongside our team of chefs or simply jump in on the action.

Rose Wilde

Rose Wilde, raised in a vibrant Hispanic family in Ecuador, draws on a rich tapestry of cultural experiences from her time in diverse locales including Tibet, Greece, and Spain. Her professional journey spans prestigious roles in pastry kitchens at renowned establishments such as Manuela, Rustic Canyon, Rossoblu, and Motherwolf. Additionally, she has traveled extensively across Israel, Morocco, Lebanon, Italy, the United Kingdom, Portugal, and Mexico, infusing her culinary creations with a multitude of flavors and techniques from around the world.

Rose is a former human rights lawyer turned activist, writer, chef, master food preserver, gardener, and owner of Red Bread Bakery. Her work has appeared in the Los Angeles Times, Washington Post, Wall Street Journal, Edible magazine, Cherry Bombe and many other publications. She has been a regular on the Food Network, Cooking Channel, Tastemade, and NPR. Find Rose’s cookbook, Bread and Roses by Countryman Press/Norton Publishing, available everywhere books are sold.

DAY ONE

Welcome to France! As you step into the vibrant city of Toulouse, the warmth of the sun embraces you, and the air is rich with the aroma of local cuisine. From the airport, you’ll begin your week with a star at a 4-star hotel in the center of the city where you can rest up from your travels and explore the city if you wish! Your stay at the Grand Hotel de l'Opéra promises a blend of modern comfort and historic charm, perfectly situated to explore the city’s culinary treasures. After unpacking, you’ll have the rest of the day to explore the city on your own. Dinner on your first night is not included, but we’ll have plenty of suggestions of where to eat (or how to order in if you’re jetlag sleepy!). all while soaking in the lively atmosphere that Toulouse is known for. Your culinary adventure is just beginning!


DAY two

monday 6.1.26

After enjoying a French breakfast at the Hotel, our drivers will escort you to your dream home for the week - the Château de Labusquière. Our team will greet you and usher you to your rooms, and then the fun begins! Picture yourself enjoying a delicious lunch in the sun-drenched courtyard, sipping refreshing cocktails with Rose Wilde by the sparkling pool, and wrapping up the day with a grand dinner in the magnificent dining hall. Each moment is sprinkled with joy and flavor, making this an unforgettable day of culinary exploration!


DAY three

tuesday 6.2.26

The Reverie team will start you off right with a tasty and generous breakfast spread, complete with homemade yogurts and jams, fresh seasonal fruits, and French pastries galore. Once you’re good and full, Rose will lead you in your first workshop with a focus on the artistry of baking with whole grains like rye, spelt, einkorn and whole wheat. And what better way to test it out than with a perfect classic chocolate chip cookie? After your workshop, we’ll have lunch in the courtyard, and then you’ll have the afternoon to yourselves to relax at the château. Go for a walk, paint a postcard to send home to friends, or work on a puzzle to give your brain a break. It’s vacation, y’all! The day will end with a guided natural wine tasting with Esmé and a splendid dinner in the dining hall prepared by our incredible chefs. Now that’s a good day!


DAY four

Wednesday is market day, and it’s time to embark on a delightful adventure in search of fresh local fruits and vegetables! After enjoying a nourishing breakfast, our charming vans will whisk you away to the picturesque countryside village of Gimont. Here, in the ancient covered market square, you’ll discover a traditional Wednesday morning market that captures the essence of French life. This market may be small, but it’s brimming with character and vibrant energy. As you wander through the stalls, let the colors and aromas transport you to the heart of the region's agricultural bounty. From luscious strawberries to fragrant herbs, each item tells a story of the land and its people. On the return trip to the château, we’ll make a stop at the Abbaye de Boulaur to experience the artistry of the sisters as they share their secrets in crafting local cheese and brewing beer. Upon arriving back at the château, indulge in a fresh market lunch. Then, it’s time to roll up your sleeves! Under Rose’s expert guidance, you’ll dive into a biscuits and pie workshop, where sweet meets savory to create delicious treats featuring those good-good whole grains. Come evening, we’ll gather for a cocktail hour followed by dinner. A day well spent sharing stories, laughter, and, of course, incredible food!

On your final full day at the château, prepare for an unforgettable experience with Rose Wilde's fabulous cake workshop! After indulging in a delightful French breakfast spread, you'll join your host for an immersive lesson in the art of cake. Discover how to create a variety of delicious fillings and master the secrets of flavored buttercreams. To culminate this sweet adventure, you'll have the opportunity to assemble your own portion of an EPIC long cake, perfect for a midsummer-themed celebration in the charming château courtyard. For this grand finale, the Rêverie team will prepare a grill party feast to complement your decadent dessert. There’ll be magic everywhere, and you’re sure to leave with newfound skills in party cake mastery.


DAY six

friday 6.5.26

This is our official Big Day Out in the great, beautiful city of Toulouse! We will start the day slow and easy, giving you some time to pre-pack after breakfast and serving one last lunch in the courtyard with Yopi, the resident peacock. Then we’ll load up in the vans and head into one of our favorite cities in France. In Toulouse, you will be able to wander as you like with our guide that we’ve loaded up with some of our favorite stops. There are so many historic, culinary, and cultural joys to find in Toulouse - it’s quite the city to discover! Then we will head back to the château to prepare for a final dinner out - all together this time - at La Maison Despouès, our favorite countryside treat. This will be a night to celebrate and remember - the fondest farewell between friends.


DAY seven

saturday 6.6.26

After one final night at the Château de Labusquière, it’s time to say our adieux. You’ll enjoy breakfast, and then our chauffeurs will return to grab you and your bags to take you back to the airport in Toulouse, ready for new adventures and much, much more cake. Au revoir and see you next time!

WORKSHOPS

Rose Wilde has dedicated a significant part of her career to mastering the art of baking with whole grains, both for flavor and happy bellies. Her extensive travels have enriched her palette, resulting in an exciting repertoire of flavors that she is eager to share. Throughout the week, participants will explore the world of whole grains, discovering unique textures and tastes from baking with varieties like rye, spelt, and einkorn (just to name a few!)

The journey continues as we incorporate fresh, seasonal fruits and veg from the market, transforming them into delicious pies, jams, and curds—perfect accompaniments for your pie and biscuit-making workshop. To culminate your workshop week, participants will gather for a magical Midsummer workshop dedicated to creating a stunning long cake. With Rose's guidance, you'll gain the confidence to showcase one of these delectable tabletop creations at your next party. Prepare to elevate your baking skills to a whole new, beautiful level!

  • Intro to Baking with Whole Grains - the science and artistry of confidently baking with whole grains, all squeezed into the art of a chocolate chip cookie

  • Biscuits and Pie - Let’s talk about ratios! Using similar ingredients to yield completely different results - all by playing with numbers.

  • Midsummer Cake Dream  - Rose will lead the group in creating an EPIC cake masterpiece. You’ll learn all about the perfect cake base, buttercreams, fillings, and how to construct a work of art.

Get ready for an adventure like no other! We're thrilled to take you on a vibrant trip to the Wednesday market in nearby Gimont, where you'll dive into a treasure trove of local, seasonal produce. On our final day, we’ll meander through the stunning plazas and charming old streets of Toulouse, where every corner beckons with history and beauty. And don’t forget the grand finale at La Maison Despouès, our favorite fancy restaurant just a stone's throw from the Château de Labusquière. GETTING HERE

Airplane

Several planes fly direct to Toulouse Blagnac airport (TLS) every day from Paris and other cities around Europe. We will arrange for an airport pickup on May 31st at 3:00 p.m. for a transfer to your hotel. If you arrive before or after the scheduled pickup, the airport is a short 20-25 minute drive from the city and you can easily catch a taxi to the Grand Hotel de l’Opéra. On June 6th, our drivers will drop you off at the airport at 11:00 am. All you have to do is get to Toulouse and we’ll take it from there!

*If you choose to leave earlier than the schedule departure on the last day, we would be happy to help you arrange for a private driver for an additional fee.

*Cost of airfare to the Toulouse Blagnac airport is not included in the cost of your reservation. Please let us know if we can offer any support or guidance with your travel plans - we’re happy to help!

Car

If you’re the seasoned-traveler type and you’d enjoy having your own transportation, then please - rent a car in Paris and drive down! Have a stopover in the region of Dordogne for a foie gras tartine and make a pitstop for the wild view of the old cliffside city in Rocamadour.  You could then keep your car for the week and choose your own destiny, or drop off at the Toulouse airport on the first day of the retreat and we’ll come grab you.

Train

Trains are another option for those who feel comfortable traveling around on their own! Please note that if you take the train to the Toulouse Matabiau train station, you will need to take a taxi to the Tououse Blagnac airport (20 minute drive) for our scheduled pickup time.
