What will you do?

Experience a week of baking in enchanting France with Liz Prueitt—a truly unforgettable getaway! We are thrilled to announce this new retreat.

Liz will guide us through delicious gluten-free baking recipes, offering a fantastic opportunity for anyone with gluten sensitivities to indulge in this unique experience. Spend hours immersed in the kitchen with one of the world's leading pastry chefs, while also exploring local traditions through captivating recipes and market trips.

Afterward, we will savor her creations alongside some of France's finest natural wines, celebrating the fruits of our labor together. Our home for the week will be the stunning yet cozy 13th-century Château de Labusquière, nestled in a serene corner of Gascony, just a short drive west of Toulouse. Set within a sprawling 30-acre estate, you can wander through picturesque woods and fields or unwind in the courtyard with the charming resident peacock, Yopi—a true lover of pie dough. This magnificent location will serve as the perfect backdrop for our week of learning and exploration alongside Liz Prueitt. Join us for an experience that promises to be both tasty and unforgettable.

Elisabeth Prueitt is a renowned pastry chef and co-founder of Tartine Bakery, celebrated for her innovative approach to baking and commitment to using high-quality ingredients. With a background in art and a passion for food, Elisabeth opened Tartine in San Francisco in 2002, quickly gaining acclaim for her artisanal pastries. Under her guidance, Tartine became a culinary landmark, influencing the rising interest in sourdough and artisanal baking globally. Elisabeth is also a co-author of the acclaimed cookbook "Tartine Bread," which showcases her philosophy of embracing the baking process and connecting with simple, yet exquisite flavors. Since learning that her gluten sensitivity wasn’t going anywhere, Liz has focused her efforts in developing gluten-free recipes that she shares weekly on her Substack “Have your Cake”. With her creativity and dedication to her craft, Elisabeth continues to inspire bakers and food lovers alike.

DAY ONE

monday 6.8.26

Welcome to France! As you step into the vibrant city of Toulouse, the warmth of the sun embraces you, and the air is rich with the aroma of local cuisine. From the airport, you’ll begin your week with a star at a 4-star hotel in the center of the city where you can rest up from your travels and explore the city if you wish! Your stay at the Grand Hotel de l'Opéra promises a blend of modern comfort and historic charm, perfectly situated to explore the city’s culinary treasures. After unpacking, you’ll have the rest of the day to explore the city on your own. Dinner on your first night is not included, but we’ll have plenty of suggestions of where to eat (or how to order in if you’re jetlag sleepy!). all while soaking in the lively atmosphere that Toulouse is known for. Your culinary adventure is just beginning!


DAY two

tuesday 6.9.26

After enjoying a French breakfast at the Hotel, our drivers will escort you to your dream home for the week - the Château de Labusquière. Our team will greet you and usher you to your rooms, and then the fun begins! Picture yourself enjoying a delicious lunch in the sun-drenched courtyard followed by a restful afternoon to explore. Then it’s on to sipping cocktails with Liz Prueitt by the sparkling pool with the most life-giving view and wrapping up the day with a grand dinner in the magnificent dining hall. Yes indeed, let us have cake!


DAY three

wednesday 6.10.26

The Reverie team will start you off right with a tasty and generous breakfast spread, complete with homemade yogurts and jams, fresh seasonal fruits, and French pastries galore. Following breakfast, you’ll join Liz Prueitt for your first workshop together, where she’ll introduce you to some of her gluten-free secrets. Then we’ll enjoy lunch in the sun, followed by another restful afternoon at the château. In the evening, join Esmé Curran of the Reverie team for a guided natural wine tasting where we’ll explore some goodies from the region. That’ll lead us straight to the dinner table with a gluten-free feast prepared by our team of talented chefs, and then we’ll meet you in the old kitchen for digestifs. Another good day in the books!


DAY four

thursday 6.11.26

Thursday is market day, and this time we’re headed to the gorgeous village of Auch. Sitting high about 40 minutes from the château, we’ll get to enjoy views of the cathedral while we do our morning stroll of the bustling Thursday morning market. We’ll meet at the top of the hill for lunch at one of our favorite spots in the city, and then we’ll head back to our château home to join Liz for workshop number two - gluten-free desserts. And you know the routine by now - Cocktail hour, incredible dinner, digestif party, and off to bed!


DAY five

friday 6.12.26

For last full day at the château, Liz has one last workshop in store, and the rest of the day is yours for soaking up the sun, playing with peacock (we don’t actually recommend this - keep your distance but take loads of pics!), and laughing with your new friends. We’ll end the day with an all-out-banger of a grill party, complete with bocci tournament, good music, and maybe karaoke? You never know! But do know that our chefs are masters of fire and that this will be a meal to write home about with tasty wines to top it off. Then it’s off to bed to rest up for our big day out!


DAY six

saturday 6.13.26

This is our official Big Day Out in the great, beautiful city of Toulouse! We will start the day slow and easy, giving you some time to pre-pack after breakfast and serving one last lunch in the courtyard with Yopi, the resident peacock. Then we’ll load up in the vans and head into one of our favorite cities in France. In Toulouse, you will be able to wander as you like with our guide that we’ve loaded up with some of our favorite stops. There are so many historic, culinary, and cultural joys to find in Toulouse - it’s quite the city to discover! Then we will head back to the château to prepare for a final dinner out - all together this time - at La Maison Despouès, our favorite countryside treat. This will be a night to celebrate and remember - the fondest farewell between friends.


DAY seven

sunday 6.14.26

Today, we depart from our home for the week and we soak up every last breath of the wide open air of the Gers region. Breakfast will be served and we will say our goodbyes as the vans arrive to shuttle us all away from Labusquière and toward the airport so we can all make our way to our next destinations.

WORKSHOPS

French technique is the foundation for anyone interested in building or honing their classic baking and pastry skills, and Liz Prueitt is the perfect teacher to learn from. Having spent time herself in France during her formative years, Liz’s pastry style was inspired by the simplicity of France. After years of research, she is now able to share her knowledge of turning classic recipes into gluten-free treats. Join Liz in the kitchen to learn how to make all kinds of goodies. We’ll walk through comparing French and American pastry recipes, learning how to make things like madeleines, gluten-free pastry crusts, and creating your own gluten-free flour blends.

WORKSHOPS

  • Gluten-free flours - Liz will guide you in blending your own gluten-free flour to use as a substitue for classic pastry recipes

  • Cake day - using your gluten-free flour blend, learn how to make the simple yet perfectly delicious French yogurt cake

  • Flaky pastry  - turn a classic into sweet and savory treats with a flaky pastry dough

EXPLORE

​​We can’t wait to show you around! You’ll begin your week at the 4-star Grand Hotel de l’Opéra in Toulouse with an afternoon to rest or explore as you wish. There will be a trip to the Thursday market in the stunning hilltop village of Auch for sourcing local, seasonal produce. Then, a stroll around the gorgeous plazas and old streets of Toulouse, one of France’s largest cities. We will have so many great moments at the chateau as well - from long languorous dinners in the courtyard with Yopi and the moonlight, to outdoor cooking parties, cocktails by the pool, to pâté and saucisson and gougère filled apéro hours. It’s made with love, we promise you that!

GETTING HERE

*Cost of airfare to the Toulouse Blagnac airport is not included in the cost of your reservation. Please let us know if we can offer any support or guidance with your travel plans - we’re happy to help!

Airplane

Several planes fly direct to Toulouse Blagnac airport (TLS) every day from Paris and other cities around Europe. We will arrange for an airport pickup on June 8th at 3:00 p.m. for a transfer to your hotel. If you arrive before or after the scheduled pickup, the airport is a short 20-25 minute drive from the city and you can easily catch a taxi to the Grand Hotel de l’Opéra. On June 14th, our drivers will drop you off at the airport at 11:00 am. All you have to do is get to Toulouse and we’ll take it from there!

*If you choose to leave earlier than the schedule departure on the last day, we would be happy to help you arrange for a private driver for an additional fee.

Car

If you’re the seasoned-traveler type and you’d enjoy having your own transportation, then please - rent a car in Paris and drive down! Have a stopover in the region of Dordogne for a foie gras tartine and make a pitstop for the wild view of the old cliffside city in Rocamadour.  You could then keep your car for the week and choose your own destiny, or drop off at the Toulouse airport on the first day of the retreat and we’ll come grab you.

Train

Trains are another option for those who feel comfortable traveling around on their own! Please note that if you take the train to the Toulouse Matabiau train station, you will need to take a taxi to the Tououse Blagnac airport (20 minute drive) for our scheduled pickup time.
