What will you do?
Where to even begin with this incredible journey - just the conversations about what is possible is enough to make our heads spin. First of all, we will be cozied up in the beautiful Lisdonagh Manor outside of Galway. The most idyllic and lush setting, truly (and literally) something out of a movie, will be your home and vista for the week. In true Rêverie style, the beautiful manor kitchen will be open and accessible for workshops and teaching moments with Trevor and his team. He is lovingly referring to our week together as “The Dinner” and is thinking about it like the brilliant mind he is - as if he is hosting a restaurant for a very private audience.
Trevor aims to present you with restaurant level experiences, aspirational and dedicated as he is. Anyone who joins us for this experience will get a remarkable and personal engagement with one of the greatest minds in the business.
All this, plus, we will have access to an Ireland that only Trevor can provide. Meeting with local cheese makers that he adores, trawling for seafood on the coast, live fire cooking, traditional Irish bread baking - all while we take in the beautiful countryside and culture of his homeland.

Trevor Moran
Trevor Moran made his U.S. culinary debut in January 2014 as the executive chef of Strategic Hospitality’s award-winning tasting room, The Catbird Seat. Moran brought with him an affinity for fresh, seasonal produce and a simplistic, yet highly refined cooking style. Moran and his talented team of chefs transformed the intimate dining experience with a multi-course menu that celebrated the elements.
Moran left The Catbird Seat in December of 2015 but his love for Nashville remained. He joined the Strategic Hospitality team as Culinary Consultant in 2016, assisting throughout the restaurants and off-site events.
In October of 2020, Moran partnered with Strategic Hospitality to open Locust in the 12South neighborhood of Nashville. The restaurant, which Moran opened with the intention of versatility, launched with a menu largely focused on seafood, dumplings, and shaved ice. Today, in 2023, Locust continues to be fully, uncompromisingly, and unapologetically itself, featuring a menu that leans into Moran’s Irish roots and past experiences in some of the world’s most prestigious kitchens. With a present focus on modern, classical cooking, seafood, and precise sauce work, the menu represents the Irish and British fare that Moran was first introduced to as a young chef.
In September 2022, Locust was named Food & Wine Magazine’s Restaurant of the Year and honored on The New York Times’ Restaurant List 2022. In January 2023, Chef Trevor Moran was nominated as semifinalist for Best Chef: Southeast by the James Beard Foundation.
Born and raised in Ireland, Moran’s culinary path began in his early 20’s. After working his way through several restaurants throughout Dublin, the young chef landed at Rene Redzepi’s acclaimed Noma restaurant in Copenhagen. Moran began his Noma journey in 2009 and spent nearly four and a half years learning the ins-and-outs of the Nordic kitchen, sourcing local, seasonal products that showcased different regions of Scandinavia.

DAY ONE

Welcome to Rêverie’s inaugural trip to IRELAND! You’ll arrive at the Shannon airport and we’ll gather everyone in our private vans and head to the sweet, boisterous town of Galway! We’ll start our trip with a fantastic lunch at Jess Murphy’s Kai Restaurant and then we’ll head to Lisdonagh House, our home away from home. Our host for the week, Trevor Moran, and his team will prepare a spectacular welcome dinner to properly settle us in. Welcome to Ireland!
DAY two
sunday 6.16.24
A simple Rêverie breakfast will await you when you wake up for the first time at Lisdonagh House! This will set you up for a day of travel recovery as you ease into your first full day at your home away from home. Trevor will start his workshop sessions with a couple of simple breads - sourdough and traditional Irish brown bread. These will complete our supper in the evening of Irish Chowder. Before dinner, we’ll have a private wine and cheese tasting with Sheridan’s Cheesemongers. One for the books!
DAY three
monday 6.17.24
After a relaxing morning at Lisdonagh House, we’ll head to Flaggy Shore, home of Linnane’s Lobster Bar, where we’ll learn about their oyster gigging process and taste our way through their seaside menu. We’ll stop for an after-meal coffee and treat at local bean-to-bar chocolatier Hazel Mountain Chocolates. Then we’ll head to Green’s Bar in Kinvara which was many times host to a very special Nashville native. On our way home, we’ll stop for fish and chips and one more pint at Moran’s off the Weir, an esteemed seafood house on the west coast.
DAY four

Trevor will treat us to a classic Irish Bangup Breakfast in the kitchen this morning followed by a seafood workshop in the kitchen. After lunch, we’ll take a visit to the Drioglann Loch Measc Distillery for a tour and tasting, and then we’ll be greeted at the house by JP McMahon, Irish chef at Aniar Restaurant and esteemed food historian, for a lecture on the origins of Irish foods!
DAY five

It’s restaurant day at Lisdonagh House! Trevor and his team will create an opportunity for our guests to learn about the magical dishes of Locust, his landmark Nashville restaurant and Food and Wine magazine’s Restaurant of the year in 2023. Dumplings! Shaved Ice! Some real professional tips and skills will be sprinkled throughout the day and the eating will be very, very good!
DAY six

Today is our big day out! We’ll start with a warming and filling Irish porridge prepared by Trevor and his team and then we’ll bundle up and load our coaches and head to the legendary Cliffs of Moher! We’ll picnic there, take in the vistas, and sip some hot toddies. Then to Galway, where everyone can tour as they please and meet up for pints again at Tigh Neachtain. Then we’ll head over to Éan Restaurant to enjoy Enda’s thoughtful and meticulously executed menu for our final meal together as a group.
DAY seven
friday 6.21.24
It is our final morning at Lisdonagh House! We will have a simple breakfast and say our goodbyes as we prepare for our private vans to arrive to take us back to the Shannon airport.
WORKSHOPS
Trevor aims to show you the best of his food and the best of his Ireland. You’ll be invited to learn the process of making his fermented potato bread - a staple at Locust. You’ll dig deep into the region's seafood (clams! oysters! stone crabs!). You’ll do some live fire cooking.
But mostly, you’ll get to engage with Trevor and team as they prepare high level meals for you and your fellow guests and bask in his depth of knowledge and experience. Also, you’ll just get to hang out with one fun and incredibly pleasant son of a gun. There’s talk of his shaved ice machine taking up residence in the villa kitchen. Seriously. This is going to be ridiculous fun.

While we are not immersed in Trevor’s kitchen for the week, we will be out in beautiful Ireland exploring Trevor’s most inspired culinary destinations. Exploring local farms, fisheries, markets and cheesemakers is on our list. And, while we are still daydreaming up all the possibilities, we can promise you the experiences will be second to none.

GETTING HERE
*Cost of airfare to the Shannon airport is not included in the cost of your reservation. Please let us know if we can offer any support or guidance with your travel plans - we’re happy to help!
Airplane
Guests will fly in and out of Shannon Airport in the west of Ireland. We will arrange airport pickups on the first day of the retreat, and we will drop you off on the last day. All you have to do is get to Ireland and we’ll take it from there.
Car
The Lisdonagh House in County Galway is a one hour and fifteen-minute drive from the Shannon Airport and a three-hour drive from the Dublin Airport. If you choose to rent your own car and have a little adventure, this could be a great way for you to have a little more freedom during your stay with us. Please let us know if you decide to rent a car so that we can inform our car service. Then, you can just drive right up to the Lisdonagh House and take advantage of the ample parking. We will arrange arrival times with you separately and make ourselves available for any lost wanderers. Please note : yes, cars in Ireland drive on the opposite side of the road. If that doesn’t sound naturally easy to you, we’re happy to do the driving ;)
